I've been given a box full of cookbooks that represent a lifetime of clippings and collections from an elderly lady with no kin. The handwritten recipes are amazing, and there's even a Candy cookbook with wooden bindings. Adding these to my already pretty extensive collection, I think I now have a recipe for just about anything. So if you're looking for a recipe, go ahead and ask in this thread.

If there are any Artichoke recipes, I would love to try them. My husband loves artichokes and I am constantly looking for new ways to prepare them. Also, any desert recipes without milk or products that contain any variation of milk like cheese, milk chocolate, etc. He is allergic to milk. Thanks Jamie. Can he eat eggs, my sweet? Meringue (baked, whisked egg-whites), drizzled with your/his choice of fresh fruits, like banana, berries, mango, passionfruit and even topped with nuts and honey is delicious! Bon appetite. H x

I'm afraid not, my love. He has a limited choice of culinary options. I have to substitute cool whip or a similar non-dairy topping. Eggs are a no-no. He has allergies, high blood pressure, diabetes, and hypoglycemia. His love of cooking combined with his limitations remind me of writing a Drops poem. So few choices.

Hey, Penny. I got tied up yesterday and only got to skim a few of my cookbooks for you--nothing on Artichokes so far. But I did remember to check Recipezaar for you; here's the results page for Artichoke recipes. I'll keep looking in the books I have. There's gotta be something here! UPDATE: Just found this recipe for Lemon Chicken w/Artichokes that looks pretty tasty to me: Ingredients- 2 tablespoons olive oil
- 1/2 medium yellow onion, finely chopped
- 3 medium garlic cloves, thinly sliced
- salt & freshly ground black pepper
- 1 1/2 lbs boneless skinless chicken meat, large dice
- 1 1/2 cups quartered artichoke hearts (canned or jarred not frozen)
- 2/3 cup dry white wine
- 1/3 cup water
- 1 teaspoon fresh lemon juice
- 1/2 cup lightly packed thinly sliced basil leaves
- 1 teaspoon lemon zest
Directions 1)Heat oil in a large frying pan over medium-high heat. When it shimmers, add onion and garlic, season with salt and freshly ground black pepper. Cook until golden, about 4 minutes. Add chicken and cook, stirring rarely, until well browned on all sides, about 5 minutes. Stir in the artichoke hearts and cook until slightly broken down, about 3 minutes. 2)Add wine, water, and lemon juice and scrape the bottom of the pan to incorporate any browned bits. Cook until alcohol smell is cooked off and the sauce is slightly reduced, about 5 minutes. Remove from heat, stir in basil and lemon zest, and serve.
