I was just watching Paula Dean, who happens to be my favorite chef, and she was sharing with the viewers several of her favorite "quick and easy" recipes for those of us who are pressed for time, but still like meals that give the appearance of taking a long time to make. This would also be good for those last minute parties, unexpected dinner guests, etc. Here is one of those recipes she shared today. I can't wait to make it. I usually don't make desserts because I'm not great in the culinary department, but this is something that I think even I could make without error, lol. Enjoy! Creamy Blueberry Tarts 2-8 ounce packages of cream cheese, at room temperature 1 cup sugar 1 teaspoon vanilla 2 eggs 1 box vanilla wafers 1 can of blueberry pie filling Cream together with mixer the cream cheese and sugar. Then add the vanilla and eggs. Cream these ingredients together. Line a muffin tin with cupcake liners. Then in bottom of each liner, place 1 vanilla wafer. Then add cream cheese mixture to each liner, making sure that each one has about the same amount. Bake at 350 degrees for 20 minutes. Let cool slightly when removed from oven, then add 1 teaspoon of pie mixture to the top of each tart. That's all there is to it. *Pie filling can be substituted with your favorite pie filling (Strawberry, Cherry, Apple, etc).
